Venison Smoked Kielbasa

    Doing 5 lbs for a guy here in the park.

    Mix, cure.


    Hog casings soaking 32mm.



    Ready for the fridge, no time to stuff/smoke today. The guy already had this ground to do. IMHO his fat cut in is to much.

    Oak smoking so these should have an auburn or mahogany color.

    Good start how much fat did he have in did he say??

    He didnt say how much he cut in. I think its close to 30% fat

    I didnt grind this batch, looks like he use a medium plate.

    Got busy with things, got the Kielbasa stuffed this afternoon.


    I take the meat to the end of the tube, the casing slides on easier.


    Knot the end of the casing and poke a hole to eliminate any air.


    One down, few more to go.


    Now in the fridge for tomorrow. Going with Oak smoke.

    So far so good, no fat-out. Wish he would have let me do the fat cut in.

    Got a while to go yet.

    I little extra fat will help the slices that get fried with eggs & home fries!!!
