Using cellulose casings

  1. Tried to post some photos but guess I don't know how on this forum.  Hmmmmm

I guess I am in Photo jail.  Links will not work until I get out of newbie jail.  [IMG]

Thought I would share a few photos of some Kielbasa that I did a while back using cellulose casings.

All stuffed and ready to go into the smoker

    Ready for some smoke

Smoked for 2 hrs using Hickory then finished in a hot water bath to IT of 152

Bloomed for a couple of hours and overnight in fridge then peeled the casing.

Cellulose casings make a great skinless Kielbasa.

They are in "Jail"... for first time posters they have to be "ok'd" by an administrator... they'll be along soon...

  4. OK....I wondered why they were not working.  I had edited the post.  When I get out of jail I will try again.

Also... go into your profile and click on "Edit Account Details".. and then scroll down to "Preferred Editor Type" and chose "BB Code Editor".. this should help

  7. Clicked the BB code edito but no luck in posting photos. Guess I will have to wait on the photo police to approve me
