I'd really like to try beer can cookin' on a turkey. The problem is, I have a horizontal smoker. I haven't measured anything yet, but I'm wondering if I remove the grill grates and use the lower ash grate, if I would have enough room.
Just thinking out loud here, but I'm guessing I could fashion a foil baffle to force the heat from the firebox up, so it doesn't hit the bird directly. Then extend the smoke stack down to the grate level (a mod I've been meaning to add anyhow) to keep the heat and smoke from going straight out.
Any comments/suggestions?
