I recently finished building my UDS. I am smoking ribs and chicken as I write this. I installed three 3/4" nipples near the bottom of the UDS with one of them having a 3/4" valve on it. I have the 2" and 3/4" bungs open in the top head. I am burning Kingsford original charcoal with mulberry wood. I am having a devil of a time controlling the temp. I thought I had it set up with two vents closed and the valve part way closed and then I went out to check and the temp was about 200 F. I am trying to hold 225-235 F. So, I am in the recovery mode right now. Should temp control be this touchy? Maybe this is why folks buy automatic temp control equipment. Would appreciate any suggestions. Maybe I am trying to control the temp too close.
