I have been jonsing chicken lately.
I fired up both Eggs - Bonnie and Clyde...

The weather has also been really nice here the past few weekends and the Greek Festival was in town, so it made me think of Chicken Soulvaki... you all know by now I cook for the week so here's what we are having...

Clyde was handling the chicken...
The Kettle Fried Chicken... Boneless skinless thighs... Cooked raised direct at about 350 degrees.

When those were done, I removed the adjustable rig, threw down a mesh screen and cooked the chicken breasts I had cubed and marinated in Chef Tim's Sweet Balsamic Vinaigrette.

Got a nice char on those... I love char on my chicken.

All the while, I had Bonnie set up with the plate setter and pizza stone to handle the home made pitas...

the final product...
Tadziki, red onion, cucumbers, tomatoes, and chicken...

Those thighs are so beautiful I wouldn't have thought they were skinless!

The pita?

I didn't get an invitation!

Good luck and good smoking.

Thanks all - I can't believe how easy pitas are to make and how good they are.

I find I prefer the boneless skinless thighs for Kettle Fried Chicken.

You make it sound so easy?

Like making many things, the pitas are easy to make.

It is making them as well as you do that is difficult.

Good luck and good smoking.

I gotta stop calling everyone Dude especially if they are a Dudette, back for thirds, thanks again!

A full smoker is a happy smoker

The Egg I used for the pitas was at 500* and I set it up like I would pizza - so plate setter legs down, spacers, and a pizza stone on top of the spacers. They each went about 5 minutes.
