Grilled up some brats and Italians today for lunch that I made on Sunday, they were good but not great. It was all pre-packaged spices and I think were a bit bland. I think next batch I will kick up the heat with some crushed red peppers and maybe some tobasco mixed in. I think it was a good idea to start with the pre-package but now I can start changing a few things to make some really good sausages.
 
We do the same thing, go standard then kick it up if necessary. LOL, then we try in on the neighbors and they try it

Funny thing is I never used to eat spicey foods but once I got a taste for the hot stuff I things hotter than most people I know. The only spice I ever heard of growing up was salt, no kidding my mom and dad did not cook with anything spicey at all not even plain ol black pepper. Once I got a bit older and started trying some things I found that I actually like spicey stuff, a lot.
 
twister make sure you share your "twist's " here on smf , cause i for one have been lookin for a non packaged sausage magic....seem's most the pre-pack's are lacking in both heat and flavor. i have only done sausage a few times and havent had much luck with flavor's other then the smoke taste being pretty good..........
 
Pepper's hotness. capasicum..ot something like that... lasts DAYS. Or it affects your taste for days. You really do build up a short term tolerance to it. Soo..if ya eat spicy every few days, it isn't so spicy to you. Interesting for folks who "don't like hot" <not because of medical/digestion issues> because they could just stick with it for a week....
 
Store bought "pre-packs" are like any other "homemade" recipe. After you have tried it, if you like the basic taste; then season the "base recipe" to fit your taste buds. Only difference is removing or cutting down on a spice is next to impossible.
