Turkey Balls!

    Sous wanted to make stuffed meatballs, so meatballs it is!

    Safeway had ground turkey on sale, no limit so I stocked the freezer and held out two pounds for dinner.

    Here's the base recipe. We doubled it and added a few things. We stuffed each ball with mozzarella. Also added some fresh herbs.

    1 1/4 lbs ground chicken
    1/2 cup breadcrumbs
    2 tablespoons onions, chopped
    1/2 cup pecorino cheese (or Parmesan)
    salt
    pepper
    1 garlic clove, minced
    1 teaspoon fennel seed
    1 egg, whisked
    1/2 lemon zest (zest from half a lemon)
    3 tablespoons olive oil
    1 (14 ounce) can pizza sauce
    4 ounces fresh mozzarella cheese (12 thin slices)

    Preheat oven to 400°F, setting rack to upper third part of oven.

    In a large bowl, using your hands, gently mix together first 11 ingredients.

    Shape into lacrosse-ball size balls (that would be somewhere between golf and tennis) and place a few inches from each other on a foil-lined baking sheet.

    In a small bowl, mix one spoonful of your pizza sauce with olive oil. Brush this mixture on top of each meatball. Bake for 20 - 25 minutes.

    Remove meatballs from oven, spoon some sauce on top of each meatball, and cover each with a slice of cheese.

    Broil another 3 to 5 minutes until cheese is bubbly and golden.

    Heat remaining sauce in a small saucepan.

    Serve meatballs with a dollop of sauce.


    These can be done in the smoker too if you want. They take longer but are tasty.

    Lacrosse what is that? This that game were you get get sticks and just hit each other? Gosh, they at least get pads for hockey.

    Turkey balls? Between a golf ball and a tennis ball, no wonder they are said to strut!

    ya know why I like your posts Case, you are always new and inventive. You could just spatch-cock chickens but instead .... its turkey balls!

    These look really great! I never maker large meatballs like that and then stuff them. Definitely gotta try it now. Kind of like a fatty and a moink concept in meatball form. Points!!

    Thanks Kevin! Gotta mix it up to keep my sous chef interested!

    As for Lacrosse, never even heard of it until a few year back here. Now it's all the rage. I probably would have played back in the day.

    Thank you! I usually don't make the large meatballs either, unless they are the main course. When serving with pasta I prefer to make golf ball size meat balls or smaller. When I make Vietnamese meatballs they are about the size of a "shooter" marble.

    Nice lookin meal Case, real nice. Always good to keep the kids involved, I know mine are always digging in to help as well.

    Thanks Justin! He's always bugging me to cook something. Tomorrow he's head meat grinder. Have 20 pounds of pork butt to grind in prep for sausage making!

    Those are some man sized meatballs!

    I've never made them that big, but next time I'm for sure going too!

    They look absolutely delicious!!

    Thanks Al! These are big meatballs! I only do them this big when we aren't serving them with pasta. Next batch will be smoked, by order of the Sous Chef!
