Turkey/Bacon Wraps

Trying  something new on the smoker. Bored fireman with time on my hands and this is what I came up with today.

I used a combination of apple and hickory wood for smoke.

Stated with 2 strips of bacon

Then added turkey breast strips.

Next I put some of Jeff's Rub on them.

Rolled them up with the bacon on the outside.

Looking good so far. O no did I put too much rub on them (NOT)

They went into the smoker and pulled when the inside temp of wraps reached 165 degrees.

OK so if you are counting I started with 8 but only see 7 now it is because one fell on my plate for a sample.

Seems to look good from the outside.

Don't know if someone else has tried this or not but it is new to me and VERY good.

Total cook time was about 3 hours but I was not worried with time as I was temp which was as stated above 165 degrees.
 
Them look good , try the same w/ some sausage or hot dogs or make some mini fatties w/ ground beef and do the same thing.
 
What temp did you have your MES set at?  I'm smoking two turkey breasts this weekend.  Brining them tomorrow then doing one with a citrus rub and the other with a spicy rub.  May have to wrap the spicy one in bacon like this.  Looks great!  Now I'm really hungry for lunch.
 
Looks good....sounds like you're having fun and enjoying the outcome. Did something similar a while back.....flattened chicken breast wrapped around a precooked sausage then bacon wrapped and smoked with cherry wood....yum
 
Dang they are good even cold out the fridge. I am use to eatting cold food being I am on the rescue bus here.
