I haven't had much time with a new baby around to use my new smoker, but I've done a few butts and tried some baby backs that were too well done. I used the 2-2-1 or 3-2-1 method, whichever one was recommended for baby backs. This time I'm going to go without foiling I think for about 4 hours (225 - 250) and see how it turns out. I'm shooting for a little pull off the bone as opposed to just fall off the bone.
I did an ok job at getting the membrane off, but I need some more practice at that.
I have a char-broil h20 electric from Home Depot. I've been using sand in the pan, but I think I will try water this time since I won't be foiling. I'm also going to throw a few kingsford charcoal chunks in the bottom as well as Hickory or Apple wood.
I'm using Dave's Famous Rib Rub that I got at the store (haven't attempted my own rub yet), and used a little bit of olive oil on the ribs as well. I'll also be spraying down the ribs every so often with a mixture of apple cider and apple vinegar.
I'll post some pics after I get started in 3 or 4 hours. If anyone has some additional tips I'm all ears.
