Trying Spare Ribs Today

I haven't had much time with a new baby around to use my new smoker, but I've done a few butts and tried some baby backs that were too well done. I used the 2-2-1 or 3-2-1 method, whichever one was recommended for baby backs. This time I'm going to go without foiling I think for about 4 hours (225 - 250) and see how it turns out. I'm shooting for a little pull off the bone as opposed to just fall off the bone.

I did an ok job at getting the membrane off, but I need some more practice at that.

I have a char-broil h20 electric from Home Depot. I've been using sand in the pan, but I think I will try water this time since I won't be foiling. I'm also going to throw a few kingsford charcoal chunks in the bottom as well as Hickory or Apple wood.

I'm using Dave's Famous Rib Rub that I got at the store (haven't attempted my own rub yet), and used a little bit of olive oil on the ribs as well. I'll also be spraying down the ribs every so often with a mixture of apple cider and apple vinegar.

I'll post some pics after I get started in 3 or 4 hours. If anyone has some additional tips I'm all ears.

The only way I've ever smoked spare's is to have them on the smoker for 6 hours, at a smoker temp of 225-250. I don't flip them, however I do spritz them after the 1st hour, every hour, until the 6 hour mark is up. They are never foiled during my smoke process.

I do want to try the 3-2-1 method on the next attempt at spares ... the local grocery store has them on sale for $1.99/lb ... good luck with your smoke!
 
That's the beauty of Q'ing. Try diferent methods and find the one that satisfies you own taste. My ribs are done two ways, I like a little pull from the bone and the wife likes fall off the bone and I mean fall off the bone. So on the 2-2-1 hers is 2-3, mine about 3-1-1

Ok, I cheated and grabbed a rib after 3 hours ( as you can tell by the pic). These are honestly the best ribs I've ever had. Keep in mind I'm from Washington State, and haven't found any great places in AZ to compare to.

Thanks for all the help, these ribs are amazing!
