I just caught some trout and would like to smoke them. I must use my mes for this. do to weather. But i could REALLY use some pointers for this. I have never smoked fish before. thanks. I plan on doing this smoke some time next week or weekend.
 
I've done Rainbow trout very simply. Split them open and season them simply with salt and pepper.

Use toothpicks to keep the cavity open and smoked at 225 with apple wood. An hour later dinner.
 
Never did fresh water trout but I smoked some grey trout last week.I brined mine about 4 hrs 1gal water,half cup brown sugar ,half cup kosher salt and quarter cup old bay.Rinse well,pat dry,sprinkle a little seasoning of your choice on flesh side.Skin side i sprayed a little olive to keep from sticking.Smoked about 2-3 hrs. 180-220* depending on thickness of fish.
 
I use only salt and pepper and olive oil. Then wrap with bacon. Smoke with fruit wood, like apple or cherry.
The ones that my wife catch out of the White River, I smoke for about 1.5 hours. The ones that I catch, they have to go for 2-3 hours.
Just keep it simple with fish.
