Trouble keeping heat temp at 220 in the ECB

    I have an ECB and I usually use it with the water pan to allow my meat to be moist and juicy during smoking. However, I have trouble with my temps getting anywhere above 200 in this smoker.

    I use Kingsford charcoal and I use the minion method to light them however my temps are always low.

    Is there any mod that I can do to get the temps 225 -250 consistently?

    I would suggest a quality thermometer to be sure you really are not getting that hot. Mine was reading 70 degrees low. And the longer the smoke was on, the less accurate the thermometer was.

    try using lump charcoal. it burns hotter and in my opinion tastes better too. if you like briquettes, use more or make sure that there is sufficient fresh air getting to the fire.

    And FYI, the water pan does not make your meat moist and juicy. It's just there to act as a heat sink. [​IMG]
