I am going to do some t-tips tomorrow for my mothers b-day and would like to know how long to cook them for,i keep my smoker at 225-250.also i would also like to grill them does any one have any advice on that as well. and one last thing how many people does a 11lb. brisket feed and should i trim the fat cap 10 half inch.thanks

I take my tri-tip to about 130 which is about 3 hours or so depending on the size then put them on a red hot grill for a few minutes a side for med. Then foil for about 45 minutes or longer and you will be good to go. http://www.smokingmeatforums.com/showthread.php?t=73616 theres a post of some I have done.

As for a brisket and how many it will feed. That depends on how hungry people are and how much they eat. If you figure 8oz a person then a 9lb finished product will only server 18 people.

Hope this helps.
