To score or not to score..... That is my question!?

    Do I score the balogna before I smoke it? I plan on smoking the balogna with no rub on it, naked you could say. Will scoring the outside allow more smoke flavor in or not enough to make any marked difference

    I tend to think that it allows the smoke to get deeper into the chub of bologna but then I have not proven or dis-proven that scientifically. Just sounds logical to me and might be a great reason to run a test.. actually a lot of my cooking is for that purpose[​IMG]

    I like to cut the bologna up into 2 x 2 inch or so chunks and lay them in a single layer on a cookie sheet while smoking to get maximum smoke on each piece.

    have never smoked bologna yet.  waiting till i make some of my own instead of buying some. that said, that scored stuff sure looks pretty dont it. i think its worth it just for the presentation... we eat twice, actually the first time is with our eyes.
