Timing Issue -- Smoking ahead of time

    Hello All --

    I have a party starting at Noon next Saturday. I have an ECB that I use to smoke. I plan on smoking a Boston Butt for pulling. I'd rather not stay up all night tending the ECB, but will if I have to. Does anyone have advice about re-heating a smoked shoulder if I finish it around midnight the night before? Is this just blasphemous behavior that would require turning in my Smoking Jacket? Thanks in advance for any feedback.

    Oh no.....you don't have to turn that in!  I do the day ahead lots of times.  After you pull it...or not...plop it in the fridge.  Crank the oven to about 300* and put the pp (with a foil lid) in for 30 minutes to an hour....to get it warm.  Toss it a bit to get the juices all stirred up.  There ya go!

    Thanks! I thought so, but wanted to run this by the Experts. Looking forward to getting back in "Smoking Mode!"

    As Kat said you can reheat pulled pork. I do all my pulled pork a day or two in advance. I would recommend that you pull it prior to putting it in the fridge and add your finishing sauce. Do let the Butt rest for 45min or so prior to pulling so figure that time into your cook. Reheating in the oven is the way to go. Save the juices from the foil after the rest to use if you need a bit more moisture.

    I happen to like when pp sits for a day or two. The flavors meld together nicely and you can reheat whenever you are ready.

    I agree.  I'll freeze mine.  Just as good as fresh or better.

    But ...... pleeze don't Nuke it...YUK ...them Microwaves does something terrible to good "Q".
