Got up and decided to smoke today, but was totally unprepared. I'm doing it on my Masterbuilt 7-in-1. I've never smoked on this thing before. I'll be interested to see how I feel about it vs. my Char-Griller. I'll write a review when all is said and done. Here's what I got going on:

    Ribs:

Fatty (worse roll-up ever for me)

    and

    Stuffed Chix Breasteses:

    and Wrapped:

    We'll see how this goes!

    And the congregation said, "A-men!"

Here are the breasteses. They only took an hour to cook...seems a bit quick for other chicken I've done, but I've never done breasts only before. Enjoy!

    Tasty!

I think those breasts are what's for dinner tonight. They look delicious. Just need to get to the store to get the fixins!

On edit: Did you marinate them in anything?

I marinated in zesty Italian dressing. Then used some oregano and this Italian Seasoning I bought on clearance at Target a month or so ago. It's like dehydrated tomatoes, garlic, and a bunch of other stuff. It has a very unique texture to it, but it is pretty tasty. I threw them on at about 11:15 thinking they may take awhile, but they were done at around 12:30. They didn't take on a strong smoke flavor, but they were very moist and had enough smoke flavor for the wife. I was so busy eating the fatty and sampling the ribs that I didn't eat my slice of breast yet. I was way tooooo full by that point!

    Good smoke to you!

Were those split or whole chicken breasts? They look whole?

They were whole that I butterflied in half and opened up. I'm not up on the lingo of the kitchen so I hope I said that right! Hope that helps.

I made some chicken breasts last night almost identical to mrwizardgi. Most were stuffed with the green peppers and onions and wrapped with bacon. Some not stuffed, some not wrapped. But turned out awesome!!!! Even my husband who thinks chicken should only be eaten smothered in beef REALLY liked it. Even enough to take to work today!!! Thanks mrwizardgi, this is now on my ever expanding list of dinners!!

Glad you liked it and you enjoyed it! I wish I could take credit for this idea, but I too saw it on these very forums. I can't remember who did it, but they did a chicken cordon bleu type thing in the same manner. It looked yummy so I modified it for what I needed. If someone knows the post I'm talking about please do post it...
