I plan on smoking three racks of baby backs tomorrow for dinner with some family and friends coming over.  I have smoked a couple racks in the past and I was not super satisfied with how they turned out.  The first time I did one I was just starting to smoke so I only went off of IT and they were tough and not good at all.  They kind of embarrassed me since we had company over that night and I felt like I wasted a good rack of ribs. The next time I did them I did a little more research and did the 3-2-1 method.  These were worlds better than my first attempt but I still was not completely satisfied with my efforts.  Right now I am trying to decide whether I try the 3-2-1 method again or if I should try doing them no foil.  I will be under a little bit of a time constraint tomorrow because we are having guests for dinner.  I think I am leaning towards going without the foil but I would greatly appreciate some input and suggestions.   I have the ribs soaking in pineapple juice and I had to cut them in halves due to limited space.  I plan on giving them a good coating of dry rub tomorrow before I throw them on.  I have read about doing the bend test on ribs (don't know if I'll be able to since I cut them in half) as well as the pull back on them.  I was hoping to get a little more information on what to look for with these if anyone can help.

I also have some questions about maintaining the temp in my smoker.  I have a chargiller with SFB and use kingsford briquettes.  I have tried a couple different types of lump charcoal but did not like them because I felt the kingsford actually gave me better temps.  I have to throw more charcoal on about every 20 minutes when I am smoking but I am wondering if I should just load my coal basket up with as much as possible and then just really restrict the air flow to try to control the temp without having to open the SFB?

Any suggestions would be greatly appreciated and If you can go into detail on it that would be the best.  I really need it broken down barney style and I'll put up some pics as the day goes tomorrow.
