Well I had tried to make my smoker cry uncle but planning to stuff it to the gills but the smoke gods must have been conspiring against me.
I originally put in 2 butts, a brisket 2 racks of spare and planned a 2nd and third wave.
After my 5 lbs brisket was in the smoker for 12 hrs it started to pour. I quickly placed it and the butts in the oven to finish them off. Both butts were boneless and weighed almost exactly the same. One pulled beautifully, lots of nice bark. The other I had to slice most of it because I wasn't able to pull it.
Great smoke ring on the butts but almost no smoke flavor. I had used pecan this time but I don't think it was just that.
First time with spare didn't go well either. It took a long time till they pulled back from the bone and while they had great taste, the end was dry.
Brisket was moist and juicy with a moderate amount of smoke flavor but hardly any smoke ring.
I had to wind up doing the peppers and turkey and a small meatloaf in the oven, the rest I put in the freezer.
