I just want to give a big thank you to everyone who posts on this forum. I am starting to become known as the "meat guy" in the neighborhood. Some of the recipes I use are ones I got from my dad, but a lot of things I do are tips and ideas I have gotten from this forum. I just smoked a salmon for my wife's cousin this weekend. I have only done it once before, because I don't like fish. I wasn't worried though, because I knew I could hop on SMF and get all of the advice I needed on what to do. When I was done, it came out perfect. She loved it. And she gave me a rack of ribs to keep. Thanks everyone for your posts. It really helps a lot!
