Thank you all for my first successful spare ribs!!!

    I usually do a decent job with other things , but my spares have been coming out oversmoked(creosote taste) and tough even after spending a long tome in my silver smoker.

    Yesterday I finally turned out some falling apart tender ribs by using the 3-2-1 method , lowering the chimney to grate level. I got around the creosote by using natural charcoal with some pecan for smoke.

    Thank again folks all the great advice here is already being put to use in my smoker. They were so good I even had some for breakfast! Ribs for breakfast may sound weird , but it worked for me.

    ribs & eggs... sooo not weird... i wake up dreaming of ribs & just turned out my best ever... the wife said they reminded her of ham- the consistency.... so i'm good- she even said i shoulda been in yesterday's kcbs event- even after seeing the $$$$ the heavy hitters spend... it's not the bucks- it's the food. don't ever get discouraged.

    Speaking of ham , I also smoked the heck out of a chunk of pickled pork at the same time my ribs were cooking.

    I'm planning to pull that apart and use it in some red beans this week. Cant wait!

    Sounds like a great smoke, the only thing wrong was no pics, how can we drool without pics[​IMG]
