Surprise Butt

Having a surprise birthday party for the wifey. Told her I'm smoking 2 8 pound butts for my boss. Started them at 8:30 last night.

Rubbed and ready.
Been smoking for 12 hours now. Clocks moved back last night so I get an extra hour lol. IT's are 160 and 167. Smoking at 220. Not gonna foil until they reach 197. Then will foil, wrap in towels, put in cooler until the party at 5:30.

Thanks for asking. She was totally surprised! I had her mom take her shopping for an hour, when she got back about 30 relatives and friends were here. I just barely had enough time to get everything together and pull the pork. So I didn't get any pics of the butts. But they were the best ones I've ever made. Several people said it was the best pulled pork they ever had!
