Picked up a 4 lb corned beef flat yesterday so I could make Super Bowl 'Strami Sammies today.


Soaked it for ~8 hrs in 3 gallons of plain water to pull out some of the salt.


light coat of mustard then spices (coriander, black pepper, a little cilantro and a mix of a few others)

Its into the smoker now @205 till it gets up to 150 or so, then its going on a rack into the roasting pot where I'll steam it for a couple hours to finish it off.

More qview to come.

My pastrami was put in at 8:45 into my 205F smoker, and the internal temp is already 135 at 10:15.

Seems fast to me.
 
 
Took it out at 155 and steamed in the oven for 2 1/2 hours.

Looks good!  Like I said in my brisket post - better than the game was (if you're a Broncos fan, LOL).  I thought they'd have problems with the Hawks after I watched the NFC championship.  Denver hasn't played anybody that physical all year long.

Broncos got smoked like a 12 lb brisket.  If you cut anybody from that team open right now, I'm sure you'd see a nice smoke ring!
