I made a batch of summer sausage meat on Saturday then stuffed them Sunday morning. I didn't get a chance to smoke them so question is how long before I'm screwed and have to throw them away. My work schedule thru the week is crazy and don't know when I'll be home in time to get them done. Thanks in advance for any help.

It has cure in it. I'm trying to get some smoke on them right now. Figure I can give them a couple of hours of smoke then either bring them in and finish tomorrow or just bring to final it in oven tonight. Farmer you're always there when I need ya. Thanks David for the response. When I get this cured meat thing all squared away I'll be golden.
 
Ahhh Adam my friend I went without photos on this one. I'll snap a couple of shots when I take them out in about an hour just to appease the qview god's!!

Here they are out of the smoker. Had a little bit of fat out in two of them but think they will still be OK. Will try to put them back it tonight and get them to temp. Using hickory with this smoke.
