Summer Sausage help

    A recent response to a summer sausage question, someone posted they used oat meal. Well I am getting ready to make a 15lb batch and was wondering what ratio of oat meal did you put in. Thanks in advance for your response.

  3. I've answered this by pm - but might as well have it in public record. lol

    ratio I use tends to be around 1 level cup of oats per 5-6lb of meat. no other rusk is necessary.

    Same sort of thing.
    Though obviously I've used a low fat sausage meat with oats :) And didn't bother with the 24 hours hanging nonsense.
