My in laws asked me to smoke up two 8 Â½ to 9 pound buffalo prime ribs for the family Christmas get together. I have smoked a store bought pre-marinated prime rib before, but never a prime rib from scratch. Since this will be a one shot deal for me I would like to hear suggestions from my SMF buddies on how I should go about making this a successful smoke and not wrecking their Christmas meal. My in laws live 5 hours away, do I smoke it ahead of time at home and bring it up pre-smoked and finish in the oven or do I bring a Masterbuilt smoker with me up there and smoke it there? On the rub I do have some prime rub and injector from Curleyâ€™s Sausage Kitchen, do I try this on one of the prime ribâ€™s and a different prime rub on the other so hopefully one of them or even both are a success? Thanks in advance for any suggestions or help you have to offer.
