Hello all! I want to open a restaurant, not in North America...so it's almost a completely new territory. I know nothing about smoking and want to experiment with something small before I research and buy something for commercial use. Any and all suggestions are most welcome, this all seems so overwhelming!
 
Welcome to the site.  All the best luck in pursuing your restaurant dream.

I think that it would be good to first decide what fuel you will be needing in your restaurant rig and use that info in choosing your first smoker.

There are folks on the site with far more knowledge about what you are trying to do.  Hopefully they will chime in here.
