I found a propane grill that had about every feature on my want list and was both name-brand and affordable. Then I got the magnet out and discovered that the cabinet was made from lower quality, stainable "stainless."

Later experimenting revealed that our "stainless" tableware (happily used for years) would also attach to a magnet as would many other items.

I do my outdoor cooking under an overhead cover. Exactly how important IS the quality of stainless in this application?
 
Honestly I don't think it will matter much. It all depends on the amount of chromium in the metal. As you noted the grill is stainable, but should be fine in my opinion.
