I particularly liked the video with the guy choking on smoke from the (8-10) hours on a smoker and the smoke coming out oven and the boiling.

  Super powers!  LOL .....Nah I was just thinking outside the box one day and then one thing led to another.  This can be used for more than just ribs but that's what i primarily wanted it used for.

Thanks Dan...and I know what you mean, steaming doesn't allow any type of bark to form.  I want some flavor on the outside of the bones.  The texture of those didn't look very appetizing.

Seriously, they look killer and I bet they tasted great. I ramp up my temps in the offset on a regular basis and have yet to have poor results; depending on my cut/type of meat that is...
