First of all I want to congratulate the winners of the July throwdown! Now I know that it wouldn't have mattered if I had submitted! But I still wanted to show off my ideas. This was going to be my first throwdown, and I had a couple of ideas. I cooked both a week before the deadline and was trying to decide which to submit when life got extremely crazy and of course I missed the deadline.

My first entry was a citrus honey duck smoked on cherry wood. I then made some Thai rice noodles in a soy peanut sauce. Added in cilantro, lime, bean sprouts, scallions, and wantan strips to finish it off.


The other was a hickory smoked braided pork tenderloin manicotti. I also smoked some hot peppers. I then made a filling with the tenderloin pieces and ricotta, asiago, and Romano cheeses. A homemade marina out of roma tomatoes and the smoked hot peppers. I was really happy with this one and it tasted amazing, but i was leaning towards the duck since I thought it would be a little different.

I don't agree with you.

I think those are Great ideas! delicious ideas! As a matter of fact, winning ideas. Good photos if the pictures were slightly enhanced. I can show you what I mean, if you give me permission to enhance your photos.

Ok then, here we go, the simple basics as suggested to me.

1. Most people do not give enough light. If you get the food general diffused light, the food will look very good. Never use a flash. 

2. Use the camera's auto timer and a tripod, your pictures will be very sharp.

3. The food is the star, don't use too much background, and the big "Freedom" code word is a big distraction on almost all entries.

So taking your pictures, and I apply the above, I think they come out a little different. I think you have winning dishes.

I did not lie to you when I said your dishes and photos could have been winning entries?

The same can be said with all the other entries in the Throwdown. Everyone of them are in fact great creations.
