I've cooked rabbit lots of ways but never smoked......   It is a lean meat so an initial smoke then braise in beer, onions, garlic, rosemary, etc. may be a way to cook it...    Because it is a big New Zealand, it may be tough unless braised....   I raised NZ's and Cal's for meat....  they are some mighty fine eating critters....  One of my fav's.......

Personally I'd cold smoke it for maybe 30 minutes.. Season it wrap it in bacon.. tooth pic it and grill over charcoal indirect higher heat
