Smoking Pork Necks

    Hi All,

    I have a Masterbuilt Smoker and looking to smoke a pork neck. I have Wood chips which are mesquite and hickory combined. I was wondering how this will go with a Cajun marinade? Or should this only have Mesquite or Hickory Marinade? I have some Cajun powder and was looking to marinate them for a day or so and then smoke it at Christmas.

    Any ideas and tips?

    I think your game plan is fine. No reason why a cajun marinade wouldn't be good. Post some pix when you do it. I've got some pork necks in the freezer and I want to smoke them and use them in meat sauce.....
