Smoking Over Night

Hi guys,

I have two grills 

- Weber Genesis

- Weber Performer

My AMZNPS should be arriving soon now that the mail post service is resuming after a strike.

If I am planning to smoke that would take a long time ( say a brisket or pulled pork ), I should be having consistent smoke throughout the entire cook but I am concern that overnight cooking on the performer will yield fluctuations in temperature ( and that the fuel may run out ).

With the genesis I don't have to worry about it. What do you folks think?

You won't get the same flavor with gas that you would get with charcoal, but at least you'll get a good nights sleep.

I think that the performer is better option it is more insolated for the smoke.

IMO - Weber Kettle Grills are the best charcoal grills on the market.  You can easily use them for smoking.

Your Weber Genesis gas grill has a large slot along the back, that allows for most for the smoke to escape.  You have to plug most of it, and then you take a chance on overheating your gas grill.

If you set up your charcoal using the Minion Method, I bet your Weber Performer would be a great choice.

I really thought that the mention of a gas grill will cause this thread to have no responses and have the entire forum shun me =)
