Hey there my name is Charlie and I'm just getting into smoking foods. I am primarily interested, at least for now, in cold smoking. Specifically, I want to make my own cold smoked salmon like you get at some sushi places. I also want to smoke some cheese and then at some point I'll get into hot smoking foods like ribs, brisket, etc.

I bought a cold smoke generator off eBay from Porky Pa and so far it works great, but I am still a noob at smoking so I ruined some cheese last night. I bought a small metal trash can and mounted the generator and smoked some cheese, but I don't think I properly vented it because I had some nasty creosote smell and taste. I will try again tonight with some sharp cheddar and gouda with alderwood and apple.

Looking forward to learning about smoking from the many experienced people here.
