Wahiawa Hi
Well, Im gonna smoke some more eggs here in a bit. I am gonna move away from the way that I normally do it though in hopes of a better smoke flavor. This time I am gonna boil them first then crack the shells and smoke them for an hour that way. supposedly from everything I have read this lets the smoke get more into the egg which produces a better smoked egg. We shal see. Wish me luck!

BamaBBQ, Thats the way I normally do them too but its also the only way Ive tried them since I started smoking eggs. Figured Id mix it up a bit to see what kind of flavor I could get.
 
This time they turned out great. Definately more of a smoked flavor than my normal way. When these are gone Im gonna smoke the next batch for 2 hours for more flavor hopefully, maybe Ill try peeling them first as mentioned above too. I took 6 and deviled them this time which was as much of a hit as the normal hard boiled ones. Didnt really loose any of the smoke flavor either.
 
First I added about a tablespoon of liquid smoke to the water and boiled the eggs for 12 minutes. Then I soaked them in ice cold water for about 5 minutes and moved them to the fridge.
 
Next I started a small charcoal fire then added 5 or 6 good sized chunks of hickory to the coals

Filled the water pan and put the cracked eggs on the top shelf for an hour

Thank you! I like the coloring of the ones that I smoke the other way but I like the flavor a lot more this way and thats what counts. Shoot, I only have 4 solid eggs and two deviled eggs left! My fam loves em too!

I guess at 53 I'm old school. I take my eggs out of the refrig and put them into the smoker an smoke them for about an hoiur an a half. The I take them out and let them cool then I eat them. 
 
I definately recommend it. They are great. Only thing is later on today Im gonna try and smoke a dozen for 2 hours in hopes of a bit more smoke flavor. Gonna use apple wood this time too!
