Smoking a picnic monday!

    Ive done it before with good results , but I wanted to see if somebody could tell me how to get the skin to come out crispy.

    To me the skin is the best part if done right , but in the past it has come out hard like a shell.

    Anyone got some good picnic experience?

    All I have ever done is slather it with yellow mustard and then put about a half a cup of rub on it.

    A picnic - comes from the lower front arm of a piggie look sort of like a little ham with the bone in but cheaper than hams.

    Kick up the heat a bit at the end and it'll be hard and tasty. Brine it and it''l taste like ham.

    may sound crazy but.. smoke as usual spritz & baste w/ whatever @ the end - dump in a cajun cooker or deep fry @ 400-450 for about10 -20 mins.depending on weight. 8-10lbs.

    Do'en a picnic today after church, got the inject reduceing as i type. i'm gona do it the same as butt
