Smokin' from the coast of WI

  1. Hi everyone,

    Really got serious this year and upgraded from an ECB to a Traeger 055 Junior model. Thanks to my father in law for letting me practice with his. I don't claim to be a pellet zealot, but a number of reasons gave me confidence in purchasing one.

    1) I was introduced to the art of Q by my wife's Uncle. He is an extremely accomplished national competitor and has cooked for years with Traegers.
    2) 2 children under the age of 4, working full time and a house convinced me that I needed a set it and sort of forget it cooker.

    Why do I Q:
    1) Love the food.
    2) BBQ is fun; the people, the food, etc.
    3) Love the food. I know, but it needed to be posted twice.
    4) Always enjoyable to come up with new ways to cook otherwise common food.
    5) It's relaxing to cook some good Q, and enjoy the weekend.

    This is a great forum, keep up all the great work and supporting each other. I also lurk at the BBQ Forum for ideas, however it consists of a lot of competition folks.

    Welcome to the SMF , I looked at those Traegers and wished I'd gotten one when I had the chance. A bit too many bux involved but they sure are nice. You should have a lot of fun with yours.

    In the past couple of months I've done ribs, chicken thighs, boston butt, and pork loin. I have notes on most cooks written down so that I remember things I'd like to change.

    The Traeger wasn't cheap, but being the smallest unit I picked it up for $400 US, it included 60 lbs of Alder pellets. I'll admit it was pricey, but I don't mind paying a little more for a quality product. Also, I had given up cigarettes more than a year ago and was itching for a little reward. Like I say, I gave up smokin' so I could buy a smoker. The alder has been good for practice, but not much else. I keep thinking of picking up some fish to try with it.

    Chev Pickup... nice project. I have an Oldsmobile in the garage. It isn't the level of project you got going on. Cheers fellow gear head.

    My BBQ experience has been watching, and helping this guy: . I've helped him serve the masses at Rockn' Ribfest in Davenport, IA, compete in Madison, WI and compete at the Jack Daniels World Championship.

    The BBQ community, like this forum, is just a fun group of people. I'm looking forward to sharing ideas and results.

    Dave welcome to SMF glad you joined us. Congrats on the Traeger. As you have noticed there is lots of info here and some really good recipes. You will find everything here from people that are about to buy a smoker all the way to competition smokers and Q restaurant owners.
