Evening everyone, I messed around with a clearance model ECB a few years back, what a mistake. It ended up at the road but at least someone took it and probably got an equal amount of annoyance. Last week I picked up a MB Pro Dual Fuel, what a difference. Two racks of baby back ribs (Luau rub, cherry/apple/mesquite) were falling off the bone and the corn was amazing. Either way, I'm Eric and having fun with the smoker. Eventually I'd like to have a built in brick model in the backyard. 

After finishing a few smoked chicken and turkey breasts this afternoon I joined the site and quickly came across the fatties and had to make a trip back to grocery store. Two in the fridge waiting on a morning smoke, whiskey soaked cherry, one breakfast version and one Italian sausage version. I'll have a doc on standby.

Great tips on the site, I'll surely be using many of them as I tend to jump right in,

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions Post it
and you will probably get 10 replies with 11 different answers. That is because their
are so many different ways to make great Q We all have our own taste.

Welcome aboard, Eric!  This is the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks who really enjoy helping one another.  Looking forward to your input here, and just ask when you need anything...someone here will surely have the answer.

Will make the uploads a bit faster too.

Thank you Dave, appreciate the welcome. Have enjoyed roaming through the site and looking forward to learning more. I'll have to check out the E Course, sounds interesting as there are some areas I want to know more about.
