Smoker from Oregon driftin in'

I should have guessed there was a forum for me!, Hey gang.

My name is Davy, my wife, Joni and I reside in Oregon, I attempt to smoke tons of our NW fish. Salmon,sturgeon(gators we call em), kokanee and trout. Our more recent results have been goooood. Using a simple dry brine of about a 5 to 1 sugar/salt, and few spices.

I am fairly new at it but have the bug, bad! I have a electric, digital, Turkey Foundation smoker-- sorry no pics yet. I want to find an old freezer and convert it- I will need loads of help with that!

I want to learn to smoke meats and make sausage.

I can't wait to persue this forum and get to know some of you ,,,,,,and just maybe,,,, contribute sumthin

Glad you're here with us at SMF, Davy. I have cousins that live in Portland and Salem, absolutely love to visit them!!! Been snowboarding on Mt Hood @ Timberline lodge a few times.
