Just smoked up 2 "ready to cook" hams that I will be reheating Thursday for different gatherings I'll be attending. Injected em with plenty of maple syrup. Then I trimmed off the skin and fat and rubbed the outside with a mix of maple syrup and honey. The AMNPS was lit at both ends with a mix of hickory and apple. All went in to the MES. Temp was 225. Basted with honey/syrup mix a few times during the smoke.They were taken off as they hit 150. They picked up some nice color. Love the color! And the other one Thanks for looking.
