We got this as a gift and its good but I think I can make it to suit our taste better.

What percentage of each should I start out with?

I know its to your personal taste but I need some sort of starting point.

My wife likes more salt and I like more pepper so I will more than likely make a his and hers.

This will have to be good !!!

Are you gonna make a mix then smoke? Or just smoke the salt?
Just smoke the salt.

I am wondering what percentages I should start out with.

It looks like garlic is the primary ingredient. If it were me, I would start with 2 parts garlic, 1 part smoked salt and then 1/2 the amount of black pepper. I would then adjust to suit my taste from there, you could always add more salt. It's easier to fix something under salted as opposed to over salted (at least it's a spice mix so it's easier.)

Thanks for the idea, I have a ton of smoked salt. I'll try this to use some up. I reuse the disposable McCormick S & P grinders so I'll fill one up.

Looks to me like 2-1-1 Dry Minced Garlic, Coarse Sea Salt and Cracked Black Pepper. I use Kosher for cooking but this Baleine Red and Blue (Fine) for everything else...JJ
