Smoked my first meatloaf today. I LIKE it smoked!!!!

I added two mods to the ECB. I drilled 14 holes 5/16" onto the fire pan, 7 on each side. And added a small grill inside the firepan to get the coal out of the ashes. These worked GREAT!! Only 2 chimneys of Royal Oak Chunk Charcoal... Gotta Love that!!!

Took Jeff's Smoked Meatloaf recipe from his blog and followed it pretty much ot the letter to start. I used Pecan for this smoke. Added 1/2 gallon of Apple Cider in the water pan.

Didn't take any pics of of prep, but here is one just before the lid goes on the ECB.... Put it on a 12" aluminum Pizza pan from Wally World.

Smoked it to 150* and then brushed it with my BBQ sauce. I modified the one Jeff sells to my liking.. Chipolte pepper, more garlic and lots of CBP.
Finished it to 165* and let it sit for about 10 minutes... Had to chase my wife and daughter away a frew times.....

You Sir, are QUITE correct!!! I liked tha fact that the onions in the meatloaf are still crunchy. Adds nicely to the flavor and mouth feel.
