Smoked Chicken Enchiladas

    I started with two yard birds. Smoked them with Pitmasters choice -Hickory/Cherry/Maple pellets in an amnpts and all that in my MES. The birds were done in ~3hours at about 275*.

    I pulled the chickens and made enchiladas.


    I had too eat one before the picture so I could say how it was [​IMG]


    It was very very good. I love these and will be making turkey ones and pork ones. I have been just pulling most of these as that makes it ready for so many things. I like putting pulled meat in my salads for work lunches. I make sandwiches and burritos and enchiladas.

  4. Looks good. Smoked bird in enchiladas is very tasty.
