Looks good! Did you use the water pan? Just wandering, because I have been wanting to do a high temp cook like that.
I used a foiled empty water pan,and a foiled clay saucer.bottom grate rested on saucer,had throwaway alum pan resting on grate to catch drippings.. easy cleanup..
I have heard of a lot of people using the clay pot bottoms in the water pans. I will have to give it a try sometime. Thanks for the post
