Smoked bacon and Blue Cheese Ball

    Thought I'd throw this one out there for you cheese heads. Making a cheese ball is a first for me, so I started simple half blue and half cream cheese's, fried and ground some hickory smoked buckboard bacon and mixed it into the soft cheese mix. Refrig'ed till it firmed up again and then rolled in toasted chopped almond pieces and more bacon.
    Here it is in plastic heading back to the frig.

    I smoked my cheese ball with a few store bought logs, I used pecan for the smoke and smoked for a little over an hour in the cardboard smoker. My cheap soldering iron burned out with the last batch of cheese so I used two hot brickettes in the tin can with the pecan. it worked real well, temps stayed around 65, with 40 degree temp outside.

    As I was rapping it up and putting it away, I said what the heck I got to try it. It's good now but will I let it mellow as long as I can. here's a pic of the missing spoonful. You can also see the color it took on.

    Dan, that loosk awesome. Love cheeseballs and that has to taste good. Nice job. Can you expand on the recipe a little. Would like to make it. [​IMG]

    LOL I can but not a whole lot. I used 4 oz of blue and 4oz of cream cheese. I fried up about a pound of bacon , but didn't use it all (doing a conperison with Erain). I added the bacon into the soften cheese till it looked like enough then cooled to firm it up and added the almond and bacon rub on the outside..thats about it, if ya got a perticular guestion ask. Me I'll like to see some recipes posted so I can do it better next time
    After asking my mom sent this one to me:

    16 oz cream cheese-
    6 oz bleu cheese
    ½ c margarine/butter
    1tsp parsley
    1tsp chive
    ½ c chopped black olives
    11/2-2 c finely chopped walnuts (not sure, she didn't have amt in recipe)

    Mix all ingredients and roll in finely chopped walnuts

    Put in plastic bags and refrigerate or freezer
    Makes 4 good size.

    Man that sounds good to and we love blue cheese in this here household. Hense the bliu cheese in the Abt's. My mother used to get those cheese rolls when e would go traveling and we ate them I guess cause there wasn't any around her house when she died. But I like the cheeses you did and maybe I'll try that blue cheeses balls. I know we have some in the refig.

    The variety never ceases to amaze me. I guess I am not very creative, I would have never thought of making a cheese ball and smoking it.
