Smoke House design-still on the drawing board

  1. Hi All:

I am still planning to start my smokehouse (SH) build based on Pops 6927's model. Previously, I had made an entry asking about opinions on lining a smoke house with cement board and thank you all for your responses. I was looking for a design that allowed me to hot-smoke/cook/cold-smoke, all in one enclosure. I managed to find 5x10 sheets of stainless steel for $75/sheet and have a friend who will cut, bend, and weld for free. I plan to make the SH 3x3xabout 6'-9" lined with approx. 22 gauge stainless w/ a drip pan formed in the bottom.

The SH walls will be made of plywood outside of a 2x4 stud wall insulated with figerglass and covered inside with cement board then stainless. I plan to use the same burner as Pops 6927 and will vent in a similar way to his. This should be pretty efficient on the propane, be easy to clean, address the moisture accumulation issue, and allow me the veratility I'm looking for. It will be built on a reinforced homemade pallet so I can move it with my tractor forks.

I have not begun this project yet and would welcome any and all feed back.
