Smoke a Rare Beef Roast

    I have beef roast (Chuck roast) sitting in my freezer that I am thinking about smoking this weekend. Has anybody ever smoked a roast to midrare, about 150 degrees? I will be slicing it, but I don't know if it would be too tough or not. I was thinking wraping in foil around 100 degrees then pulling off the smoker around 140 and putting it in a cooler with towels for a while.

    If your slicing it I would take it to 180 to 190. If you want pink meat, I would go with a different cut of meat.

    Chucks can be a tough cut of meat that is better for pulling. For slicing a better cut would be a top sirloin to 135' and slice.

    im a big fan of these cuts, the first one i did for this year i messed up on the temp that i like them at.
    this one was pulled out when it hit 138, wasent watching the time rather then the meat temp.
    ate one half that night then made sammies the next nght,

    If you read up on cuts of meat, you'll find that certain cuts should be cooked longer and to a higher internal temperature. Pork butt and beef chuck are two such cuts and that's why they are favorites for low-n-slow smoking.

    There is lots of info on this site on cooking chuck roast; I advise against your cooking plan.
  6. Go to Sam's Club and get yourself a whole sirloin tip and smoke it to medium. My brother does these and I would fight Chuck Norris for a bite. It's so good. And might I suggest some smoked garlic mashed potatoes for a side.

    I have cooked one to medium. Much tougher than other cuts but it was still tasty. I don't think I'd do it again tough.

    Thanks for your advise, and sorry it took so long to get back. Never did get around to smoking the the roast, I got vetoed by the wife and ended up doing it in the oven. Now I know that if I want to smoke a roast to get a different cut.
  9. chuck roast is for stewing..its a very tuff cut and need moist heat cooking. sounds good though!
