I have a 2 1/4 pound brisket flat that I plan on smoking later this week. I was curious what you guys think about cutting it in half and tying it together with the fat caps on the outside of the tied up bundle. Was thinking this might help it from drying up since it is such a thin cut. Any thoughts or ideas? Thanks!
 
i don't see why not,i would say it should keep it more moist,you will have to smoke longer since it will be thicker.good luck
