Here is the latest effort,they came out really good,nice and spicey the way I like them.I had a problem with a new batch of 22mm casings so I had to change from slim jims to fat jims.I took a couple of pounds to work today and almost started a fight and was instructed to bring in more.

Looks great David. I'm going to have to get around to trying my hand at making some.
 
Debi,I mix my own spices rather than buying a mix cause Ive found the pre mixes to be a bit bland for my taste.This also allows you to tweek the recipe to suit your own personal taste or to personalize the meat for someone elses taste.I normally make product for friends and I can mix the spices just the way they like them.
