Just back back from judging a KCBS contest. Got to talk to Harry Soo. Wow, what a really nice guy. Unlike a lot of Comp Teams, Harry is real people. So here is Harry's Rib Recipe( not the way I would do it) Rub: 4Tbs Kosher Salt 2 Tbs Granulated sugar 2Tbs Brown sugar 2 Tbs Chili Powder 2 TBS Papria 2 Tbs Cumin 2 Tbs Granulated Garlic 1 Tbs Black Pepper !/2 TSP Cayenne pepper Smoke at 275 for 3 hours. Drizzle with Agave Juice (Tequilla) and a light coat of brown sugar. Return to smoker. Check for doneness after another hour. Brush with favorite BBQ Sauce and put on Q for about 5 minutes.
