Short Sweet and to the Pork! (lol... I'm punny)

Our local cash and carry started to carry bone in pork butt in a two pack cryovac so I thought I would give it a try. Picked up a 17 lb. bag and the results are this:

Butt #1: Rub was 1C brown sugar, 3 Tbs. of very spicy Jerk rub, and 2 Tbs. of kosher salt.

Summary: This is a definate keeper! The bark was sweet and spicy, the meat was very juicy. Super tastey!

Butt #2: Rub was 1C brown sugar, 4 Tbs. Old Bay Seasoning, 2 Tbs. fresh black pepper.

Summary: Very juicy but not as much flavor as the other rub. Still very tastey and would be any chain BBQ joint hands down.

Looks great and the old bay sounded interesting,  I'd eat it!

I really like the butts both of them and that old bay rub sounds alittle familiar to me.
 
Man looks great, I like Old Bay taste and smell. Usually I just put it in my crab boil along with a bag of  Zatarains boil.

Think I will try a little bit added to my rub.

I found adding Old Bay to a rub really is a nice way to get some additional flavor into it, I use it in place of cellary salt/seed since it has some cellary salt in it. It did OK by itself in the rub, but it didn't stand out after the butt was cooked. I also like using Old Bay on chops and just pan frying them with a little EVOO - that is very tastey!

The winner was definately the Jerk seasoning butt. I could have just eaten all the bark and been happy... lol.
