Our local cash and carry started to carry bone in pork butt in a two pack cryovac so I thought I would give it a try. Picked up a 17 lb. bag and the results are this: Butt #1: Rub was 1C brown sugar, 3 Tbs. of very spicy Jerk rub, and 2 Tbs. of kosher salt. Summary: This is a definate keeper! The bark was sweet and spicy, the meat was very juicy. Super tastey! Butt #2: Rub was 1C brown sugar, 4 Tbs. Old Bay Seasoning, 2 Tbs. fresh black pepper. Summary: Very juicy but not as much flavor as the other rub. Still very tastey and would be any chain BBQ joint hands down.
